Hops extract creates an unfavorable environment for most microorganisms, meaning that bad bacteria can’t grow. The hop plant was considered a weed before its peculiar properties were discovered, namely that it has specific antibacterial effects. It’s native to much of the world, including North America, but it isn’t really edible in any simple way. Each vine produces about 0.75 to 2 pounds of dried hops. At harvest time, each plant is cut down entirely, and the whole vine is sent through what’s basically a combine, which separates the female flowers from the rest of the plant.
